Our culinary teams have dedicated themselves to crafting delectable experiences inspired by the rich tapestry of Hispanic and Latin American cultures, featuring both timeless classics and unique creations contributed by our talented culinary cast members.

Throughout the festivities, and extending beyond, you'll have the opportunity to savor an array of tantalizing delights that will transport you with every mouthful and sip. For instance, you won't want to miss the savory Pollo Guisado, available at various Disney Resort hotels within the Walt Disney World Resort, or the visually stunning Cinnamon-Chocolate Mexican Sweet Bread Funnel Cake, a treat so beautiful you might hesitate to eat it, found at Stage Door Café.     • In 2006, Chef Andres made the bold move from Mexico City, Mexico, to the United States, not knowing a word of English. He initially took on the role of a dishwasher, but it was in the hustle of the kitchen that he discovered his true passion for cooking, motivating him to pursue formal culinary training. Following his graduation, Chef Andres found his culinary home at Disney, where he has contributed his skills to various renowned establishments, including Victoria & Albert’s, Enchanted Rose, and Cítricos. One standout creation from Chef Andres is the Braised Pork Panceta al Pibil, a delectable twist on the classic cochinita pibil, a traditional slow-roasted Yucatec Mayan pork dish from the Yucatán Peninsula. This rendition showcases Berkshire pork belly infused with flavors of sour orange, annatto, pipián verde, plantains, and the distinctive ají amarillo pepper from Peru. To honor tradition, it incorporates corn, a key ingredient, through a unique corn ash garnish. Additionally, it pays homage to Florida with the inclusion of pickled Florida peaches. For a perfectly harmonious pairing, this dish is designed to complement the La Rosa, La Piña, y El Mezcal beverage, thoughtfully crafted by Cítricos Proprietor Rafael.
